Chocolate and Fig Cake
Ingredients
- 3 eggs 
- 2 cups sugar 
- ¾ cup unsalted butter, slightly softened and cut into chunks 
- 1 teaspoon vanilla 
- 1 teaspoon of salt 
- 2 teaspoons of baking powder 
- 1 teaspoon of cinnamon 
- ½ a teaspoon of mace 
- 8 tablespoons of milk 
- 2 cups flour 
- ¼ of a cup of almond flour 
- ¼ of good coco powder 
- (85g|3oz) of grated really good cooking chocolate (thanks to @pjburgess I used Willie’s Cacao from Waitrose) 
- a good amount of dried, sliced figs (or if you’re feeling adventurous, un-dried (wet? moist? succulent?)) figs 
Instructions
- Preheat oven to 140°C. Lightly grease and flour a 10" springform pan. 
- Beat eggs and sugar together for a few minutes, until the mix has turned a pale yellow. 
- Add butter and extracts and beat for 2 minutes. 
- Whilst the above is mixing, melt the grated chocolate in a glass bowl over a pan of hot water, stirring with a spatula to keep it smooth and glossy. 
- Add the milk and salt and mix for another 30 seconds. 
- Tip in the chocolate and blend until smooth. 
- Stir in the flours, coco powder and baking powders, spices and fold in figs. Pour into greased pan. 
- Bake for a little under an hour. 
- Allow to cool, then put cake in head.
